I recently was with friends in NC and the host had the most amazing chocolate chip cookie whoopie pies filled with decadent cream cheese icing. They were delicious and over the course of 3 days I think I ate 6! I got home and had 3 white head pimples - always a tell tale that I have had too much sugar!
Here is a recipe that I recently found and tweaked a bit. You can adjust, adding any seeds or nuts you love. It will satisfy your sweet tooth without the high sugar, while also providing fiber, protein, and omegas. So, we can call it a skin glowing treat! Or at least a sweet tooth treat that will not cause pimples!
Ingredients:
1/3 C. Sunflower Seeds
1/3 C. Pumpkin Seeds
1/3 C. Walnuts
1/3 C. Pecans
1/3 C. Chia Seeds
1/3 C. Hemp Seeds
1/3 C. Flax Seeds
1/3 C. Raw Tahini Paste
1/4 C. Pure Maple Syrup
1 C. Dark Chocolate Chips (at least 70%)
Sea Salt to top
*You can use any nuts such as cashews, almonds, etc. The original recipe also called for coconut flakes
Preheat oven to 350.
Put all your nuts and seeds in a food processor for a couple minutes to blend then pour into a bowl.
Add tahini and maple syrup and mix together.
Line a cookie sheet with parchment paper.
Press mixture onto parchment paper. You can simply use your hands to press and flatten.
Bake for about 30 min.
While baking, melt chocolate chips.
Remove nut/seed mixture from oven and spread melted dark chocolate chips on top.
Sprinkle sea salt on the top.
Place in the freezer for at least 30 minutes before cutting.
Cut into pieces and store in air tight container in the freezer.
